Dark Cocoa Vegan Pancakes

I don’t know about you, but during the holidays I dream of quiet, slow, lazy, and cozy mornings, when for just a few days, my family isn’t rushing out the door in chaos mode. Do I get a yes or yes about this one?

And to go with that vibe, delicious and healthy pancakes make the perfect breakfast. I LOVE this DIY pancake in a jar gift idea. These are vegan dark cocoa pancakes and all you need to do is add almond milk and coconut oil to the dry ingredients in this jar. (Optional-There are some chocolate chips added for an extra sweet and cute treat). Enjoy! 

Dark Cocoa Vegan Pancakes

  • 1.5 cup flour (I use Anita Organic All Purpose or you could substitute for Gluten Free Flour)
  • 2 tsp baking powder
  • 2 tbsp coconut sugar
  • 1/4 tsp cinnamon
  • 1 tsp dark cocoa
  • 1/4 tsp sea salt
  • 1.5 cup almond milk
  • 1 tbsp coconut oil + extra for frying (I used the liquid coconut oil but you can use regular and melt it before adding)

 

Mix all dry ingredients. Add wet to dry and stir. Add coconut oil to pan, an ice cream scooper to add batter. Let cook over medium heat, and flip. Serve with your favorite pancake topping.
